Chicken Marsala over Spaghetti

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (8-oz) pkg sliced mushrooms
  • 1 onion, sliced
  • 1 cup Marsala wine (or use chicken broth)
  • 1 cup low-sodium chicken broth
  • 1 tsp pepper
  • ½ tsp salt
  • 2 Tbsp cornstarch
  • 2 Tbsp cold water
  • 1 (16-oz) pkg whole wheat spaghetti

Instructions

  1. Place chicken, mushrooms, and onion in a 5- to 7-quart slow cooker.
  2. Whisk together wine, broth, pepper, and salt; pour over chicken.
  3. Cover and cook on LOW 8 hours or until chicken is done.
  4. Whisk together cornstarch and cold water; add to cooker. Increase heat to HIGH; cook, uncovered, 15 minutes or until thickened.
  5. Meanwhile, cook pasta according to package directions. Serve chicken mixture over pasta.

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Cook broccoli according to package directions. Toss with oil, salt, and pepper.
