Shrimp Pesto Pasta
Ingredients
- 4 oz cavatappi pasta (1⅓ cups)
- 1½ tsp butter
- ½ lb peeled and deveined, large raw shrimp
- ½ (12-oz) pkg broccoli florets, coarsely chopped
- ⅓ cup low-sodium chicken broth
- ¼ cup pesto
- ¼ cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; set aside.
- Melt butter in a skillet over medium heat; add shrimp. Cook, stirring occasionally, 3 to 4 minutes or until shrimp turn pink. Remove from skillet.
- Stir in broccoli and broth; cover and cook 2 minutes or until broccoli is crisp-tender.
- Stir in pesto, and cook until thoroughly heated. Add shrimp, hot cooked pasta, and cheese; toss.
