Ingredients

  • ¼ cup fig preserves (see Note)
  • 4 slices sourdough bread
  • 4 slices mozzarella cheese
  • 1 Tbsp olive oil

Instructions

  1. Spread preserves on one side of 2 bread slices. Top with cheese and 2 bread slices.
  2. Cook sandwiches in hot oil 2 to 3 minutes per side or until golden and cheese melts.

Side Dish Ingredients

  • 2 cups baby spinach
  • ⅔ cup halved grape tomatoes
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
