Lemon Pork Chops
Tomato-Feta Couscous and Steamed Green BeansIngredients
- ½ lb boneless pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp all-purpose flour
- 1 Tbsp olive oil
- ¼ cup low-sodium chicken broth
- 1½ Tbsp lemon juice
Instructions
- Sprinkle pork with salt and pepper. Dredge pork in flour, shaking off excess.
- Cook pork in hot oil in a nonstick skillet over medium-high heat 5 minutes per side or to desired doneness; remove from skillet.
- Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork.

- ½ cup couscous
- 1 Roma tomato, chopped
- ⅓ cup crumbled feta cheese
- 1½ cups frozen green beans
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Prepare couscous according to package directions. Add tomato and cheese; toss.
- Steam green beans according to package directions. Sprinkle with salt and pepper.
