Lemon Pork Chops

Tomato-Feta Couscous and Steamed Green Beans

Ingredients

  • ½ lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 3 Tbsp all-purpose flour
  • 1 Tbsp olive oil
  • ¼ cup low-sodium chicken broth
  • 1½ Tbsp lemon juice

Instructions

  1. Sprinkle pork with salt and pepper. Dredge pork in flour, shaking off excess.
  2. Cook pork in hot oil in a nonstick skillet over medium-high heat 5 minutes per side or to desired doneness; remove from skillet.
  3. Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork.

  • ½ cup couscous
  • 1 Roma tomato, chopped
  • ⅓ cup crumbled feta cheese
  • 1½ cups frozen green beans
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Prepare couscous according to package directions. Add tomato and cheese; toss.
  2. Steam green beans according to package directions. Sprinkle with salt and pepper.
