Herb-Roasted Pork Tenderloin

Bacon and Parmesan Brussels Sprouts

Ingredients

  • 1½ tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp onion powder
  • 2 (1-lb) pork tenderloins, trimmed 
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F. Combine Italian seasoning, salt, onion powder, and desired amount of pepper; rub all over pork.
  2. Brown pork on all sides in hot oil in an ovenproof skillet over medium-high heat 4 minutes. Transfer skillet to oven.
  3. Bake 15 minutes or until a meat thermometer registers 145°F. Let stand 5 minutes before slicing.

Side Dish Ingredients

  • 1½ lb small Brussels sprouts, halved (quartered, if large)
  • 1 large clove garlic, thinly sliced
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ⅛ tsp crushed red pepper 
  • 4 slices bacon, cut into ½-inch pieces
  • ½ cup grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together Brussels sprouts, garlic, oil, salt, and red pepper on a large rimmed baking sheet; spread in a single layer. Sprinkle with bacon; bake 20 minutes.
  2. Toss Brussels sprouts with cheese. Bake 5 minutes longer or until cheese melts.
