Herb-Roasted Pork Tenderloin
Bacon and Parmesan Brussels Sprouts
Ingredients
- 1½ tsp Italian seasoning
- 1 tsp salt
- 1 tsp onion powder
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp olive oil
Instructions
- Preheat oven to 425°F. Combine Italian seasoning, salt, onion powder, and desired amount of pepper; rub all over pork.
- Brown pork on all sides in hot oil in an ovenproof skillet over medium-high heat 4 minutes. Transfer skillet to oven.
- Bake 15 minutes or until a meat thermometer registers 145°F. Let stand 5 minutes before slicing.
Side Dish Ingredients
- 1½ lb small Brussels sprouts, halved (quartered, if large)
- 1 large clove garlic, thinly sliced
- 2 Tbsp olive oil
- ¼ tsp salt
- ⅛ tsp crushed red pepper
- 4 slices bacon, cut into ½-inch pieces
- ½ cup grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 425°F. Toss together Brussels sprouts, garlic, oil, salt, and red pepper on a large rimmed baking sheet; spread in a single layer. Sprinkle with bacon; bake 20 minutes.
- Toss Brussels sprouts with cheese. Bake 5 minutes longer or until cheese melts.
