Caramelized Onion and Goat Cheese Pizzas
Apple Slices
Ingredients
- 1 large sweet onion, thinly sliced
- 1 Tbsp olive oil, divided
- 2 tsp balsamic vinegar
- 2 burrito-size whole wheat flour tortillas
- 2 oz goat cheese
- 1½ Tbsp milk
- 2 cups baby arugula
Instructions
- Preheat oven to 475°F. Cook onion, covered, in 2 tsp hot oil in a large nonstick skillet over medium heat 5 minutes or until almost tender; uncover and stir in vinegar.
- Cook 5 minutes, stirring often, until onions are browned and tender.
- Arrange tortillas on a greased baking sheet.
- Mash goat cheese and milk in a bowl using a wooden spoon until smooth; spread on tortillas. Top with onions.
- Bake pizzas 6 minutes or until crisp; drizzle pizzas with 1 tsp oil, and top with arugula.
