Caramelized Onion and Goat Cheese Pizzas

Ingredients

  • 1 large sweet onion, thinly sliced
  • 1 Tbsp olive oil, divided
  • 2 tsp balsamic vinegar
  • 2 burrito-size whole wheat flour tortillas
  • 2 oz goat cheese
  • 1½ Tbsp milk
  • 2 cups baby arugula

Instructions

  1. Preheat oven to 475°F. Cook onion, covered, in 2 tsp hot oil in a large nonstick skillet over medium heat 5 minutes or until almost tender; uncover and stir in vinegar.
  2. Cook 5 minutes, stirring often, until onions are browned and tender.
  3. Arrange tortillas on a greased baking sheet.
  4. Mash goat cheese and milk in a bowl using a wooden spoon until smooth; spread on tortillas. Top with onions.
  5. Bake pizzas 6 minutes or until crisp; drizzle pizzas with 1 tsp oil, and top with arugula.
