Flank Steak with Balsamic Sweet Potato Sauce
Apple-Arugula SaladIngredients
- ¾ lb flank steak (or use skirt steak)
- ½ Tbsp Montreal steak seasoning
- 1 Tbsp avocado oil
- 1 small sweet potato, peeled and grated
- 1 clove garlic, minced
- ½ cup chopped onion
- ¼ cup organic chicken broth
- 2 Tbsp balsamic vinegar
- 2 Tbsp light coconut milk
- ½ tsp arrowroot
Instructions
- Trim steak, and cut across the grain into ¼-inch-thick slices. Toss together steak and seasoning in a small bowl. Cook steak in hot oil in a large nonstick skillet over medium heat 3 minutes.
- Return all steak to skillet. Add grated potato, garlic, and onion; cook 6 minutes.
- Combine broth, vinegar, coconut milk, and arrowroot. Add to skillet; bring to a boil, and simmer 4 minutes or until thickened.
Side Dish Ingredients
- 1 (5-oz) pkg baby arugula
- 1 sweet apple, cored and chopped
- ½ Tbsp apple cider vinegar
- ½ Tbsp Dijon mustard
- ½ Tbsp raw honey
- 1½ Tbsp extra virgin olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Combine arugula and apples in a bowl.
- Whisk together vinegar, mustard, honey, oil, salt, and pepper. Pour dressing over salad, and toss.
