Flank Steak with Balsamic Sweet Potato Sauce

Ingredients

  • ¾ lb flank steak (or use skirt steak)
  • ½ Tbsp Montreal steak seasoning
  • 1 Tbsp avocado oil
  • 1 small sweet potato, peeled and grated
  • 1 clove garlic, minced
  • ½ cup chopped onion
  • ¼ cup organic chicken broth
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp light coconut milk
  • ½ tsp arrowroot

Instructions

  1. Trim steak, and cut across the grain into ¼-inch-thick slices. Toss together steak and seasoning in a small bowl. Cook steak in hot oil in a large nonstick skillet over medium heat 3 minutes.
  2. Return all steak to skillet. Add grated potato, garlic, and onion; cook 6 minutes.
  3. Combine broth, vinegar, coconut milk, and arrowroot. Add to skillet; bring to a boil, and simmer 4 minutes or until thickened.

Side Dish Ingredients

  • 1 (5-oz) pkg baby arugula
  • 1 sweet apple, cored and chopped
  • ½ Tbsp apple cider vinegar
  • ½ Tbsp Dijon mustard
  • ½ Tbsp raw honey
  • 1½ Tbsp extra virgin olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine arugula and apples in a bowl.
  2. Whisk together vinegar, mustard, honey, oil, salt, and pepper. Pour dressing over salad, and toss.
