Glazed Mini Meat Loaves
Mashed Sweet Potatoes with Rosemary and Steamed BroccoliIngredients
- 1 cup chopped onion
- ½ cup shredded carrot
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 Tbsp olive oil
- 1 cup organic ketchup, divided
- 1½ lb lean ground beef
- ½ cup whole wheat panko breadcrumbs
- 2 Tbsp yellow mustard
- 1 Tbsp Worcestershire sauce
- 2 large eggs, lightly beaten
Instructions
- Preheat oven to 425°F. Sauté onion, carrot, garlic, and oregano in hot oil in a nonstick skillet over medium-high heat 5 minutes or until tender.
- Gently mix together onion mixture, ½ cup ketchup, beef, and remaining ingredients using your hands.
- Shape mixture into balls, and place in 12 greased muffin cups. Spoon ½ cup ketchup over meat loaves.
- Bake 20 to 25 minutes or until done.
Side Dish Ingredients
- 4 large sweet potatoes
- 2 Tbsp butter
- 1 tsp dried crushed rosemary (or use fresh)
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 2 heads broccoli, cut into florets
Side Dish Instructions
- Preheat oven to 425°F. Bake potatoes 30 to 45 minutes or until tender; peel potatoes, and mash in a bowl.
- Stir in butter, rosemary, and ½ tsp each salt and pepper.
- Meanwhile, steam broccoli in a steamer basket over simmering water 5 to 7 minutes or until crisp-tender. Sprinkle with ½ tsp each salt and pepper.
