Baked Greek Chicken with Orzo
White Bean Hummus and CucumberIngredients
- 1½ lb boneless, skinless chicken breasts
- 3 Tbsp olive oil, divided
- 2 tsp Greek seasoning, divided
- 6 carrots, cut into chunks
- 2 zucchini, cut into chunks
- 1 pint organic grape tomatoes
- 1½ cups whole wheat orzo
Instructions
- Preheat oven to 350°F. Drizzle chicken with 1 Tbsp oil, and sprinkle with 1 tsp seasoning on a greased roasting pan. Toss vegetables and tomatoes with 2 Tbsp oil and 1 tsp seasoning.
- Arrange vegetables around chicken on pan. Bake 25 to 30 minutes or until chicken is done and vegetables are tender.
- Meanwhile, cook orzo according to package directions. Serve chicken on orzo.
Side Dish Ingredients
- 2 cloves garlic
- 1 (15-oz) can BPA-free cannellini beans, drained and rinsed
- 2 Tbsp tahini (sesame seed paste)
- 2 Tbsp chopped fresh parsley
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp cayenne pepper
- ¼ cup olive oil
- 1 organic English cucumber, sliced
Side Dish Instructions
- Process garlic, beans, tahini, parsley, lemon juice, salt, cayenne pepper, and oil in a food processor until smooth. Serve with cucumber slices.
