Baked Greek Chicken with Orzo

White Bean Hummus and Cucumber

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil, divided
  • 2 tsp Greek seasoning, divided
  • 6 carrots, cut into chunks
  • 2 zucchini, cut into chunks
  • 1 pint organic grape tomatoes
  • 1½ cups whole wheat orzo

Instructions

  1. Preheat oven to 350°F. Drizzle chicken with 1 Tbsp oil, and sprinkle with 1 tsp seasoning on a greased roasting pan. Toss vegetables and tomatoes with 2 Tbsp oil and 1 tsp seasoning.
  2. Arrange vegetables around chicken on pan. Bake 25 to 30 minutes or until chicken is done and vegetables are tender.
  3. Meanwhile, cook orzo according to package directions. Serve chicken on orzo.

Side Dish Ingredients

  • 2 cloves garlic
  • 1 (15-oz) can BPA-free cannellini beans, drained and rinsed
  • 2 Tbsp tahini (sesame seed paste)
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp cayenne pepper
  • ¼ cup olive oil
  • 1 organic English cucumber, sliced

Side Dish Instructions

  1. Process garlic, beans, tahini, parsley, lemon juice, salt, cayenne pepper, and oil in a food processor until smooth. Serve with cucumber slices.
