Chicken Sausages and Roasted Vegetables

Ingredients

  • 1 (12-oz) pkg peeled, cubed butternut squash
  • ½ lb Brussels sprouts, trimmed and halved
  • ½ red onion, sliced
  • 2 cloves garlic, thinly sliced
  • 1½ Tbsp canola oil
  • ½ tsp dried thyme
  • ⅛ tsp salt
  • 3 (3-oz) chicken and apple sausage links
  • 1 Gala apple, chopped
  • ¼ cup pine nuts

Instructions

  1. Preheat oven to 425°F. Place a large baking sheet in oven while preheating.
  2. Toss together squash, Brussels sprouts, onion, garlic, oil, thyme, and salt. Carefully spoon mixture onto hot baking sheet; spread in a single layer.
  3. Pierce sausages with a fork in several places and arrange over vegetables. Bake 20 minutes.
  4. Add apples and nuts; bake 10 minutes longer.
