Ingredients

  • 1 lb plant-based ground beef
  • 3 bell peppers, chopped
  • 1 large onion, chopped
  • 2 cups frozen corn kernels
  • 3 cloves garlic, minced
  • 1 (15-oz) can black beans, drained and rinsed
  • ⅓ cup water
  • 2 Tbsp low-sodium taco seasoning
  • 1½ cups shredded Mexican-blend cheese

Instructions

  1. Cook plant-based beef in a large skillet over medium-high heat 6 to 8 minutes or until crumbly.
  2. Meanwhile, sauté bell peppers and onion in another large skillet coated with cooking spray over medium-high heat 3 to 4 minutes. Add corn and garlic; cook 4 to 5 minutes.
  3. Add beans, water, and seasoning; cook 4 to 6 minutes or until thoroughly heated. Stir in plant-based beef. Top with cheese; cover and cook 2 minutes or until cheese melts.

Side Dish Ingredients

  • 3 (3.5-oz) pkg boil-in-bag brown rice
  • 3 green onions, thinly sliced
  • ½ tsp salt
