Shrimp Scampi

Bibb Salad with Creamy Garlic Dressing

Ingredients

  • 1 (16-oz) pkg whole-grain angel hair pasta 
  • ¼ cup butter 
  • 3 cloves garlic, minced
  • 2 lb unpeeled wild-caught raw shrimp, peeled and deveined
  • ⅓ cup white wine (or use low-sodium chicken broth)
  • ¼ tsp pepper
  • 1 cup freshly grated Parmesan cheese
  • 1 Tbsp Italian seasoning

Instructions

  1. Cook pasta according to package directions.
  2. Melt butter in a large skillet over medium heat. Add garlic and shrimp; sauté 3 to 5 minutes until shrimp turn pink. Stir in wine and pepper.
  3. Bring to a simmer; cook, stirring constantly, 1 minute. Remove from heat; stir in cheese and seasoning. Serve shrimp over pasta.

Side Dish Ingredients

  • 3 heads Bibb lettuce, chopped
  • 2 organic Roma tomatoes, chopped
  • ¼ cup sour cream (or use Greek yogurt)
  • 2 Tbsp olive-oil mayonnaise
  • 1 Tbsp white wine vinegar
  • 1 clove garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine lettuce and tomatoes in a bowl.
  2. Whisk together sour cream, mayonnaise, vinegar, garlic, Italian seasoning, salt, and pepper. Pour dressing over salad, and toss.
