Shrimp Scampi
Bibb Salad with Creamy Garlic DressingIngredients
- 1 (16-oz) pkg whole-grain angel hair pasta
- ¼ cup butter
- 3 cloves garlic, minced
- 2 lb unpeeled wild-caught raw shrimp, peeled and deveined
- ⅓ cup white wine (or use low-sodium chicken broth)
- ¼ tsp pepper
- 1 cup freshly grated Parmesan cheese
- 1 Tbsp Italian seasoning
Instructions
- Cook pasta according to package directions.
- Melt butter in a large skillet over medium heat. Add garlic and shrimp; sauté 3 to 5 minutes until shrimp turn pink. Stir in wine and pepper.
- Bring to a simmer; cook, stirring constantly, 1 minute. Remove from heat; stir in cheese and seasoning. Serve shrimp over pasta.
Side Dish Ingredients
- 3 heads Bibb lettuce, chopped
- 2 organic Roma tomatoes, chopped
- ¼ cup sour cream (or use Greek yogurt)
- 2 Tbsp olive-oil mayonnaise
- 1 Tbsp white wine vinegar
- 1 clove garlic, minced
- 1 Tbsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Combine lettuce and tomatoes in a bowl.
- Whisk together sour cream, mayonnaise, vinegar, garlic, Italian seasoning, salt, and pepper. Pour dressing over salad, and toss.
