Chicken Cacciatore
Steamed Rice and Garlicky BroccoliIngredients
- 2 lb boneless, skinless chicken breasts, cut into 3-inch pieces
- ¼ tsp salt
- ¼ tsp pepper
- 2 red or green bell peppers, thinly sliced
- 1 red onion, thinly sliced
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 3 cloves garlic, minced
- 1 tsp crushed red pepper
- 1 cup low-sodium chicken broth
- ¼ cup chopped fresh parsley
Instructions
- Sprinkle chicken with salt and pepper. Place in a 5- to 7-quart slow cooker coated with cooking spray.
- Top with bell peppers, onion, tomatoes, garlic, red pepper, and broth.
- Cover and cook on LOW 8 hours. Sprinkle with parsley.

- 1½ cups uncooked long-grain rice
- 2 lb fresh broccoli, cut into spears
- ½ cup low-sodium chicken broth
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
Side Dish Instructions
- Cook rice according to package directions.
- Cook broccoli, broth, garlic, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat, covered, 6 minutes or until broccoli is tender.
