Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into 3-inch pieces
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 red or green bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 3 cloves garlic, minced
  • 1 tsp crushed red pepper
  • 1 cup low-sodium chicken broth
  • ¼ cup chopped fresh parsley

Instructions

  1. Sprinkle chicken with salt and pepper. Place in a 5- to 7-quart slow cooker coated with cooking spray.
  2. Top with bell peppers, onion, tomatoes, garlic, red pepper, and broth.
  3. Cover and cook on LOW 8 hours. Sprinkle with parsley.

  • 1½ cups uncooked long-grain rice
  • 2 lb fresh broccoli, cut into spears
  • ½ cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook broccoli, broth, garlic, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat, covered, 6 minutes or until broccoli is tender.
