Ingredients

  • ½ cup reduced-fat mayonnaise
  • 2 Tbsp lemon juice
  • 1 Tbsp honey
  • 1 tsp ground turmeric
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups coarsely chopped rotisserie chicken
  • 2 Honeycrisp apples, diced
  • ½ cup thinly sliced red onion
  • 2 (5-oz) pkg baby kale

Instructions

  1. Whisk together mayonnaise, lemon juice, honey, turmeric, salt, and pepper in a large bowl. Add chicken, apples, and onion; toss. Serve chicken salad over kale.
