Asian Chicken-Quinoa Salad

Ingredients

  • ¾ cup quinoa
  • ¼ tsp salt
  • ½ (8-oz) pkg frozen shelled edamame
  • 1½ cups shredded rotisserie chicken
  • ½ (16-oz) pkg tricolor coleslaw
  • 2 (4-oz) cups mandarin oranges in juice, drained
  • 1 red bell pepper, chopped
  • ¼ cup sesame-ginger dressing
  • ¼ cup roasted, salted sunflower kernels

Instructions

  1. Cook quinoa according to package directions, adding salt to cooking water. Cook edamame according to package directions.
  2. Toss together quinoa, edamame, and remaining ingredients in a bowl.
