Pan-Seared Salmon with Herb Butter

Ingredients

  • 3 Tbsp butter, softened
  • 3 Tbsp chopped fresh cilantro
  • 1 tsp lime zest
  • 1 (1-oz) envelope taco seasoning mix (or use fajita seasoning)
  • 6 (6-oz) salmon fillets
  • 1½ Tbsp olive oil
  • 2 limes, cut into wedges

Instructions

  1. Mash together butter, chopped cilantro, and lime zest in a small bowl. Season with salt, if desired. Set aside.
  2. Sprinkle fillets with taco seasoning. Cook fillets in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Squeeze a lime wedge over each fillet.
  3. Serve herb butter on hot fillets. Season with salt and pepper, if desired. Serve lime wedges on each plate.

Side Dish Ingredients

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 1½ (5-oz) pkg arugula
  • 1 pint grape tomatoes
  • ⅓ cup lime vinaigrette

Side Dish Instructions

  1. Heat potatoes according to package directions. Season with salt and pepper, if desired.
  2. Toss together arugula, tomatoes, and vinaigrette in a bowl.
