Pan-Seared Salmon with Herb Butter
Mashed Potatoes and ArugulaIngredients
- 3 Tbsp butter, softened
- 3 Tbsp chopped fresh cilantro
- 1 tsp lime zest
- 1 (1-oz) envelope taco seasoning mix (or use fajita seasoning)
- 6 (6-oz) salmon fillets
- 1½ Tbsp olive oil
- 2 limes, cut into wedges
Instructions
- Mash together butter, chopped cilantro, and lime zest in a small bowl. Season with salt, if desired. Set aside.
- Sprinkle fillets with taco seasoning. Cook fillets in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Squeeze a lime wedge over each fillet.
- Serve herb butter on hot fillets. Season with salt and pepper, if desired. Serve lime wedges on each plate.
Side Dish Ingredients
- 1 (32-oz) pkg refrigerated mashed potatoes
- 1½ (5-oz) pkg arugula
- 1 pint grape tomatoes
- ⅓ cup lime vinaigrette
Side Dish Instructions
- Heat potatoes according to package directions. Season with salt and pepper, if desired.
- Toss together arugula, tomatoes, and vinaigrette in a bowl.
