Barbecue Chicken Grilled Cheese
Simple Romaine SaladIngredients
- 3 cups shredded rotisserie chicken
- 1 cup barbecue sauce
- 12 slices bread
- 12 slices mozzarella cheese
- 12 dill pickle slices
- 3 Tbsp olive oil
Instructions
- Toss together chicken and barbecue sauce in a bowl.
- Divide chicken among 6 bread slices; top with cheese, pickles, and remaining bread.
- Cook sandwiches, in 3 batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 4 to 5 minutes per side or until bread is toasted and cheese melts.

- 6 cups chopped romaine lettuce
- 1 pint grape tomatoes, halved
- ⅓ cup olive oil vinaigrette
