Barbecue Chicken Grilled Cheese

Ingredients

  • 3 cups shredded rotisserie chicken
  • 1 cup barbecue sauce
  • 12 slices bread
  • 12 slices mozzarella cheese
  • 12 dill pickle slices
  • 3 Tbsp olive oil

Instructions

  1. Toss together chicken and barbecue sauce in a bowl.
  2. Divide chicken among 6 bread slices; top with cheese, pickles, and remaining bread.
  3. Cook sandwiches, in 3 batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 4 to 5 minutes per side or until bread is toasted and cheese melts.

  • 6 cups chopped romaine lettuce
  • 1 pint grape tomatoes, halved
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
