Chicken and Apple Kale Salad

Ingredients

  • 6 cups chopped kale
  • ½ cup olive oil vinaigrette, divided
  • ⅔ cup chopped apple
  • ½ cup crumbled goat cheese
  • 1½ cups shredded deli rotisserie chicken
  • ¼ cup chopped walnuts

Instructions

  1. Toss kale with ¼ cup dressing in a large bowl; let stand 10 minutes.
  2. Add apple, cheese, and chicken to kale. Drizzle with ¼ cup vinaigrette, and sprinkle with nuts.

Side Dish Instructions

  1. Serve crackers alongside salads.
