Beef "Tacos"

Jalapeño-Pineapple Salsa

Ingredients

  • 1½ lb lean ground beef
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 8 romaine lettuce leaves, halved crosswise
  • Jalapeño-Pineapple Salsa (recipe follows)

Instructions

  1. Cook beef, chili powder, cumin, salt, and pepper in a large nonstick skillet over medium heat 8 minutes or until meat is no longer pink.
  2. Add 2 to 3 Tbsp water, if needed, to prevent sticking.
  3. For each taco, stack 2 lettuce leaves; fill with beef mixture, and top with Jalapeño-Pineapple Salsa recipe.

Side Dish Ingredients

  • 1 small jalapeño pepper, seeded and minced
  • 2 cups diced pineapple
  • ½ cup chopped fresh cilantro
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Combine all ingredients in a bowl.
