Beef "Tacos"
Jalapeño-Pineapple SalsaIngredients
- 1½ lb lean ground beef
- 2 tsp chili powder
- 2 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 8 romaine lettuce leaves, halved crosswise
- Jalapeño-Pineapple Salsa (recipe follows)
Instructions
- Cook beef, chili powder, cumin, salt, and pepper in a large nonstick skillet over medium heat 8 minutes or until meat is no longer pink.
- Add 2 to 3 Tbsp water, if needed, to prevent sticking.
- For each taco, stack 2 lettuce leaves; fill with beef mixture, and top with Jalapeño-Pineapple Salsa recipe.
Side Dish Ingredients
- 1 small jalapeño pepper, seeded and minced
- 2 cups diced pineapple
- ½ cup chopped fresh cilantro
- 1 Tbsp lime juice

- Combine all ingredients in a bowl.
