Turkey and Ham Roll-Ups

Ingredients

  • ¼ cup mayonnaise
  • 1 Tbsp chopped oil-packed sun-dried tomatoes
  • 1 Tbsp chopped fresh basil
  • ½ lb sliced oven-roasted turkey breast
  • ½ lb sliced low-sodium ham
  • 1 cup mixed spring greens
  • Whole basil leaves (optional)

Instructions

  1. Combine mayonnaise, tomatoes, and chopped basil.
  2. Arrange turkey slices in 4 stacks on a work surface. Top turkey with ham slices, mayonnaise mixture, and mixed greens.
  3. Tuck a fresh basil leaf into each roll, if desired. Roll up; secure with wooden picks.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • ¼ cup thinly sliced red onion
  • ¼ cup olive oil
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together cauliflower, onion, oil, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Roast 10 minutes or just until crisp-tender, stirring once. Serve warm or chilled.
