Taco Burgers

Poblano and Corn Sauté

Ingredients

  • 1¼ lb ground beef
  • ½ lb ground chorizo sausage
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp avocado oil
  • ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 3 Tbsp chopped fresh cilantro
  • 2 tsp fresh lime juice
  • 18 iceberg lettuce leaves
  • 2 avocados, sliced
  • ⅓ cup refrigerated salsa

Instructions

  1. Combine beef, chorizo, garlic, salt, and pepper; shape into 6 patties. Cook in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until no longer pink in centers.
  2. Meanwhile, combine mayonnaise, cilantro, lime juice, and salt to taste.
  3. Arrange lettuce in 6 stacks; top with burgers, mayonnaise mixture, avocado, and salsa. Wrap lettuce around burgers; serve immediately.

Side Dish Ingredients

  • 1 cup chopped red onion
  • 3 poblano peppers, seeded and chopped (about 1 lb)
  • 3 Tbsp olive oil
  • 2 (8.75-oz) cans whole kernel corn, drained

Side Dish Instructions

  1. Sauté onion and poblanos in hot oil in a large skillet over medium heat 5 minutes.
  2. Add corn; cook 3 minutes or until thoroughly heated, adding a few tablespoons water, if needed, to prevent sticking.
