Tuna, Sweet Potato, and Apple Hash
Ingredients
- 2 lb sweet potatoes, peeled and cut into 1-inch cubes
- 1 onion, chopped
- 3 Tbsp avocado oil, divided
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp ghee
- 2 Granny Smith apples, chopped
- 1 Tbsp chopped fresh thyme
- 1 (5-oz) pkg baby spinach
- 2 Tbsp apple cider vinegar
- 2 (12-oz) cans wild-caught albacore tuna, drained
- 6 large eggs
Instructions
- Preheat oven to 425°F. Toss together potatoes, onion, 2 Tbsp oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 25 minutes or until potatoes are browned and tender.
- Meanwhile, melt ghee in a large nonstick skillet over medium heat. Add apples and thyme; cook, stirring often, 5 minutes or until just tender. Gradually add spinach, stirring until wilted. Add vinegar; cook 30 seconds.
- Toss together potato mixture, apple mixture, and tuna.
- Heat 1 Tbsp oil in a large nonstick skillet over medium heat; crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Top each serving of hash with 1 fried egg; season with salt and pepper to taste.
