Chicken Banh Mi Sandwiches
Orange-Pomegranate Toss
Ingredients
- ½ cup rice vinegar
- ½ cup warm water
- 2 tsp sugar
- ½ cup shredded carrots
- 4 radishes, thinly sliced
- 1 (8-oz) multigrain baguette
- ⅓ cup reduced-fat mayonnaise
- 2 tsp Sriracha hot sauce
- 1½ cups shredded rotisserie chicken
- 1 small English cucumber, sliced
- ¼ cup fresh cilantro leaves
Instructions
- Whisk together vinegar, water, and sugar in a bowl. Add carrots and radishes; cover, and chill 15 minutes. Drain.
- Meanwhile, cut baguette into 4 pieces. Split each piece in half lengthwise. Whisk together mayonnaise and Sriracha in a small bowl.
- Serve chicken, pickled vegetables, cucumber, and cilantro in baguettes. Drizzle with mayonnaise.
