Chicken Banh Mi Sandwiches

Ingredients

  • ½ cup rice vinegar
  • ½ cup warm water
  • 2 tsp sugar
  • ½ cup shredded carrots
  • 4 radishes, thinly sliced
  • 1 (8-oz) multigrain baguette
  • ⅓ cup reduced-fat mayonnaise
  • 2 tsp Sriracha hot sauce
  • 1½ cups shredded rotisserie chicken
  • 1 small English cucumber, sliced 
  • ¼ cup fresh cilantro leaves

Instructions

  1.  Whisk together vinegar, water, and sugar in a bowl. Add carrots and radishes; cover, and chill 15 minutes. Drain.
  2. Meanwhile, cut baguette into 4 pieces. Split each piece in half lengthwise. Whisk together mayonnaise and Sriracha in a small bowl.
  3. Serve chicken, pickled vegetables, cucumber, and cilantro in baguettes. Drizzle with mayonnaise.

  • ½ cup pomegranate arils (seeds)
