Cajun Chicken Pasta

Ingredients
- 2 (9-oz) pkg refrigerated linguine
- ½ cup butter, divided
- 1½ lb chicken breast strips
- 2 Tbsp Cajun seasoning
- 1 (8-oz) pkg sliced mushrooms
- 1 (14.4-oz) pkg frozen tricolor pepper and onion medley
- 2 cups heavy cream
- 1½ tsp dried basil
- 2 cups shredded Parmesan cheese, divided
Instructions
- Cook linguine according to package directions.
- Meanwhile, melt ¼ cup butter in a large nonstick skillet over medium-high heat. Add chicken; sprinkle with seasoning. Cook 15 minutes or until done, stirring twice. Remove chicken from skillet; keep warm.
- Add ¼ cup butter and mushrooms to same skillet. Cook over medium-high heat 5 minutes.
- Meanwhile, cook pepper and onion medley according to package directions in microwave; drain well.
- Add heavy cream and basil to mushrooms in skillet. Cook over medium-high heat 5 minutes or until slightly thickened. Return chicken to skillet; cook 2 minutes.
- Toss together chicken mixture, hot cooked pasta, pepper and onion medley, and 1 cup cheese in a large bowl. Top with 1 cup cheese. If desired, season with salt and pepper to taste.

- 2 (3-oz) pkg thin breadsticks
Side Dish Instructions
- Serve breadsticks with pasta.
