Ingredients

  • 2 (9-oz) pkg refrigerated linguine
  • ½ cup butter, divided
  • 1½ lb chicken breast strips
  • 2 Tbsp Cajun seasoning
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (14.4-oz) pkg frozen tricolor pepper and onion medley
  • 2 cups heavy cream
  • 1½ tsp dried basil
  • 2 cups shredded Parmesan cheese, divided

Instructions

  1. Cook linguine according to package directions.
  2. Meanwhile, melt ¼ cup butter in a large nonstick skillet over medium-high heat. Add chicken; sprinkle with seasoning. Cook 15 minutes or until done, stirring twice. Remove chicken from skillet; keep warm.
  3. Add ¼ cup butter and mushrooms to same skillet. Cook over medium-high heat 5 minutes.
  4. Meanwhile, cook pepper and onion medley according to package directions in microwave; drain well.
  5. Add heavy cream and basil to mushrooms in skillet. Cook over medium-high heat 5 minutes or until slightly thickened. Return chicken to skillet; cook 2 minutes.
  6. Toss together chicken mixture, hot cooked pasta, pepper and onion medley, and 1 cup cheese in a large bowl. Top with 1 cup cheese. If desired, season with salt and pepper to taste.

  • 2 (3-oz) pkg thin breadsticks

Side Dish Instructions

  1. Serve breadsticks with pasta.
