Ingredients

  • 2 lb skirt steak (or use flank steak)
  • 3 Tbsp olive oil, divided
  • 2 onions, sliced
  • 2 bell peppers (any color), sliced
  • 1 cup shredded Italian-blend cheese

Instructions

  1. Preheat broiler. Season steak with salt and pepper, if desired. Cook steak in 1 Tbsp hot oil in a large cast-iron or ovenproof skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
  2. Meanwhile, cook onions and bell peppers in 2 Tbsp hot oil in same skillet over medium-high heat 8 minutes or until tender. Add steak, stirring to blend. Sprinkle with cheese.
  3. Broil 2 to 3 minutes or until cheese melts.

Side Dish Ingredients

  • 6 Tbsp Ranch dressing
  • 2 Tbsp mayonnaise
  • 1 Tbsp white wine vinegar
  • ½ tsp garlic salt
  • 1 (10-oz) pkg angel hair coleslaw

Side Dish Instructions

  1. Combine Ranch dressing, mayonnaise, vinegar, and garlic salt in a large bowl. Stir in coleslaw; toss. Chill until ready to serve.
