Chorizo-Pepper Hash Bowls

Ingredients

  • 1 (26-oz) pkg frozen shredded hash browns
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg ground chorizo sausage
  • 1 (20-oz) pkg frozen bell pepper and onion stir-fry medley
  • 1 bunch kale, chopped
  • 2 avocados, sliced

Instructions

  1. Preheat oven to 450°F. Spread hash browns in a single layer on a baking sheet; drizzle with oil. Bake 15 to 20 minutes or until browned.
  2. Cook sausage in a large skillet over medium-high heat 6 to 8 minutes or until done. Remove from skillet; wipe skillet almost clean. Add bell pepper and onions to same skillet; cook 8 minutes or until browned and tender.
  3. Add kale, in batches, and cook 3 minutes or until wilted. Stir in sausage. Toss sausage mixture with hash browns. Top with avocado.
