Swedish Meatballs and Rice
Broccoli
Ingredients
- 1 (3.5-oz) pouch boil-in-bag brown rice
- 14 frozen fully cooked meatballs
- 1 Tbsp butter
- 1 Tbsp all-purpose flour
- ⅔ cup low-sodium chicken broth
- ⅓ cup sour cream
- 2 tsp Worcestershire sauce
- ⅛ tsp pepper
- 3 Tbsp chopped fresh parsley
Instructions
- Cook rice and meatballs according to package directions.
- Meanwhile, melt butter in a skillet over medium heat. Whisk in flour; cook 2 to 3 minutes, whisking constantly. Add broth, 2 Tbsp at a time, stirring after each addition until smooth.
- Stir in sour cream, Worcestershire, and pepper. Add meatballs to sauce, tossing to coat. Serve mixture over rice.
