Barbecue-Ranch Chicken Sandwiches

Ingredients

  • 6 slices bacon
  • 1 lb boneless, skinless chicken breasts
  • ⅓ cup gluten-free barbecue sauce
  • 3 slices Cheddar cheese
  • ½ cup buttermilk Ranch dip
  • 3 gluten-free hamburger buns, split

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp; drain on paper towels, reserving drippings in skillet.
  2. Meanwhile, cut chicken in half lengthwise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  3. Cook chicken in hot drippings in same skillet over medium heat 5 to 6 minutes per side or until done; brush with barbecue sauce, and top each with 1 slice cheese. Cover, and let stand 1 minute or until cheese melts.
  4. Spread Ranch dip over cut sides of buns. Top bottom halves with chicken and bacon; cover with bun tops.

  • 2 apples, sliced

Side Dish Instructions

  1. Bake potato tots according to package directions.
  2. Serve potato tots and apples on the side.
