Ingredients

  • 6 Italian dinner sausage links (sweet or hot)
  • 1 large onion, sliced
  • 2 small green bell peppers, sliced lengthwise
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp Italian seasoning
  • 6 hoagie rolls, split
  • 2 Tbsp butter, softened
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Score sausages at 1-inch intervals with a sharp knife. Cook sausages in a large nonstick skillet over medium heat 12 minutes or until browned all over and done. Remove sausages from skillet; cover to keep warm.
  2. Add onion to drippings in skillet; sauté over medium-high heat 2 to 3 minutes. Add bell peppers, salt, sugar, and Italian seasoning. Sauté 5 minutes. Add sausages to skillet. Cover and cook until thoroughly heated.
  3. Meanwhile, place rolls, cut sides up, on a baking sheet. Butter rolls; bake 2 to 4 minutes until toasted. Add sausage to each roll; top with onion mixture, and sprinkle with cheese. Bake 2 to 3 minutes to melt cheese.

Side Dish Ingredients

  • ½ cup heavy cream
  • 1 cup crumbled blue cheese
  • 1 tsp Worcestershire sauce
  • 1 (13.5-oz) pkg ridged potato chips
  • 1 lb seedless red grapes

Side Dish Instructions

  1. Heat cream in a saucepan over medium-low heat. Add half of cheese; mash and stir with a wooden spoon until blended and melted.
  2. Add Worcestershire, and stir in remaining cheese. Cook about 1 minute, leaving some chunks of cheese for thickness.
  3. Serve chips and grapes on each plate. Drizzle blue cheese sauce over chips or serve on the side.
