Crunchy Honey-Butter Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts 
  • ¼ cup butter, melted
  • ¼ cup honey
  • 3 cups cornflakes cereal, crushed
  • 1 tsp garlic salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Whisk together melted butter and honey in a bowl. Stir together crushed cornflakes, garlic salt, and pepper in a separate bowl.
  3. Dip chicken in butter mixture; dredge both sides in cornflake mixture. Place on a parchment paper-lined rimmed baking sheet. Coat chicken with cooking spray, and bake 20 minutes or until done.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 2 cups long-grain white rice

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together broccoli and oil on a rimmed baking sheet. Bake 15 minutes or until browned and tender; season with salt and pepper to taste.
  2. Cook rice according to package directions; season with salt and pepper to taste.
