Swiss Chard Frittata

Berries with Honeyed Yogurt

Ingredients

  • 1 bunch Swiss chard
  • 1 onion, thinly sliced
  • 1 Tbsp olive oil
  • 8 large eggs
  • ¼ cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of cayenne pepper
  • 4 cloves garlic, chopped
  • 2 Tbsp butter
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Preheat broiler with oven rack 5 to 6 inches from heat. Cut Swiss chard stems into ¼-inch slices, and coarsely chop leaves.
  2. Cook onion in hot oil in a heavy saucepan over medium heat 5 minutes. Add chard stems; cook 4 minutes. Add chard leaves; cook until tender. Drain well, squeezing out excess water.
  3. Whisk together eggs, cream, salt, black pepper, cayenne pepper, and garlic in a large bowl. Stir in Swiss chard mixture.
  4. Melt butter in a 10-inch ovenproof skillet over medium-low heat. Add egg mixture, and cook until almost set, lifting edges of egg to allow uncooked portions to flow underneath. Sprinkle with cheese.
  5. Transfer skillet to oven, and broil 2 minutes or until lightly browned, watching carefully to prevent overbrowning.

  • 1 (16-oz) pkg strawberries, halved
  • 1 (6-oz) pkg raspberries
  • 2 (5.3-oz) cartons 2% reduced-fat plain Greek yogurt
  • 2 Tbsp honey

Side Dish Instructions

  1. Combine berries in a large bowl. Stir together yogurt and honey. Serve yogurt mixture with berries.
