Swiss Chard Frittata
Berries with Honeyed YogurtIngredients
- 1 bunch Swiss chard
- 1 onion, thinly sliced
- 1 Tbsp olive oil
- 8 large eggs
- ¼ cup heavy cream
- ½ tsp salt
- ¼ tsp black pepper
- Pinch of cayenne pepper
- 4 cloves garlic, chopped
- 2 Tbsp butter
- ¾ cup shredded Parmesan cheese
Instructions
- Preheat broiler with oven rack 5 to 6 inches from heat. Cut Swiss chard stems into ¼-inch slices, and coarsely chop leaves.
- Cook onion in hot oil in a heavy saucepan over medium heat 5 minutes. Add chard stems; cook 4 minutes. Add chard leaves; cook until tender. Drain well, squeezing out excess water.
- Whisk together eggs, cream, salt, black pepper, cayenne pepper, and garlic in a large bowl. Stir in Swiss chard mixture.
- Melt butter in a 10-inch ovenproof skillet over medium-low heat. Add egg mixture, and cook until almost set, lifting edges of egg to allow uncooked portions to flow underneath. Sprinkle with cheese.
- Transfer skillet to oven, and broil 2 minutes or until lightly browned, watching carefully to prevent overbrowning.

- 1 (16-oz) pkg strawberries, halved
- 1 (6-oz) pkg raspberries
- 2 (5.3-oz) cartons 2% reduced-fat plain Greek yogurt
- 2 Tbsp honey
Side Dish Instructions
- Combine berries in a large bowl. Stir together yogurt and honey. Serve yogurt mixture with berries.
