Ingredients

  • 2 red or yellow bell peppers, chopped
  • 2 shallots, chopped
  • 2 Tbsp olive oil
  • 1½ lb peeled and deveined, large raw shrimp
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 2 tsp smoked paprika (or use regular)
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Cook bell peppers and shallots in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until lightly browned and tender. Add shrimp; sprinkle with salt and pepper. Cook 2 minutes or until just beginning to turn pink.
  2. Stir in broth, cream, and paprika; cook 3 minutes. Stir in spinach; cook 2 minutes or until spinach wilts and shrimp are done.

  • 1 (32-oz) pkg refrigerated mashed potatoes
