Herbed Mushroom and Goat Cheese Flank Steak
Basil-Roasted Potatoes and Green Beans

Ingredients
- 1½ lb flank steak, trimmed
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil, divided
- 1 (16-oz) pkg sliced mushrooms
- 2 Tbsp minced garlic
- 1 cup low-sodium chicken broth
- ½ cup heavy cream
- 1 (4-oz) pkg crumbled goat cheese
- 3 Tbsp chopped fresh basil
Instructions
- Sprinkle steak with salt and pepper. Cook in 1 Tbsp hot oil in a large cast-iron or nonstick skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
- Meanwhile, cook mushrooms in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add garlic; cook 1 minute.
- Reduce heat to medium. Stir in broth, cream, goat cheese, and basil; cook 2 to 3 minutes or until thickened. Serve sauce with steak.
