Ingredients

  • 1½ lb flank steak, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • 1 (16-oz) pkg sliced mushrooms
  • 2 Tbsp minced garlic
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 (4-oz) pkg crumbled goat cheese
  • 3 Tbsp chopped fresh basil

Instructions

  1. Sprinkle steak with salt and pepper. Cook in 1 Tbsp hot oil in a large cast-iron or nonstick skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
  2. Meanwhile, cook mushrooms in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add garlic; cook 1 minute.
  3. Reduce heat to medium. Stir in broth, cream, goat cheese, and basil; cook 2 to 3 minutes or until thickened. Serve sauce with steak.

  • 2 lb small red potatoes, halved
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh basil
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 2 (12-oz) pkg green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, basil, and ¼ tsp each salt and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until potatoes are browned and tender, stirring after 10 minutes.
  3. Meanwhile, cook beans according to package directions. Sprinkle with ¼ tsp each salt and pepper.
