Cowboy Steak and Eggs

Ingredients
- ½ Tbsp chili powder
- ½ tsp ground cumin
- 1 Tbsp finely ground espresso powder (or other finely ground coffee)
- ½ tsp salt
- ¼ tsp pepper
- 1 lb flank steak
- 3 Tbsp olive oil
- 4 large eggs
- ¼ cup chopped fresh parsley (optional)
Instructions
- Combine chili powder, cumin, espresso powder, salt, and pepper; rub all over steak.
- Heat 1 Tbsp oil in a large skillet over medium heat. Crack eggs into hot skillet.
- Cook until whites are set and yolks are cooked to desired doneness. Season eggs with salt and pepper to taste. Transfer to a plate.
- Increase heat to medium-high; add 1 Tbsp oil to skillet. Cook steak 4 to 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Divide eggs and sliced steak among 4 plates. Sprinkle with parsley, if desired.
