Cowboy Steak and Eggs

Ingredients

  • ½ Tbsp chili powder
  • ½ tsp ground cumin
  • 1 Tbsp finely ground espresso powder (or other finely ground coffee)
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 lb flank steak
  • 3 Tbsp olive oil
  • 4 large eggs
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Combine chili powder, cumin, espresso powder, salt, and pepper; rub all over steak.
  2. Heat 1 Tbsp oil in a large skillet over medium heat. Crack eggs into hot skillet.
  3. Cook until whites are set and yolks are cooked to desired doneness. Season eggs with salt and pepper to taste. Transfer to a plate.
  4. Increase heat to medium-high; add 1 Tbsp oil to skillet. Cook steak 4 to 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  5. Divide eggs and sliced steak among 4 plates. Sprinkle with parsley, if desired.
