Asian Beef Lettuce Wraps

Ingredients
- ¼ cup chopped cashews
- ½ cup thinly sliced red onion
- 1 Tbsp minced ginger
- 1 jalapeño pepper, seeded and minced
- 1 Tbsp sesame oil
- 1½ lb ground beef
- 2 Tbsp lime juice
- 3 Tbsp low-sodium soy sauce
- ½ cup chopped fresh cilantro
- 1 small head Bibb lettuce, leaves separated
Instructions
- Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
- Cook onion, ginger, and jalapeño in hot oil in a large skillet over medium-high heat 3 minutes. Add beef; cook 8 minutes or until browned and crumbly.
- Stir in lime juice and soy sauce; cook 1 minute. Stir in cilantro.
- Spoon beef mixture into lettuce leaves; sprinkle with nuts.
