Asian Beef Lettuce Wraps

Ingredients

  • ¼ cup chopped cashews
  • ½ cup thinly sliced red onion
  • 1 Tbsp minced ginger
  • 1 jalapeño pepper, seeded and minced
  • 1 Tbsp sesame oil
  • 1½ lb ground beef
  • 2 Tbsp lime juice
  • 3 Tbsp low-sodium soy sauce
  • ½ cup chopped fresh cilantro
  • 1 small head Bibb lettuce, leaves separated

Instructions

  1. Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
  2. Cook onion, ginger, and jalapeño in hot oil in a large skillet over medium-high heat 3 minutes. Add beef; cook 8 minutes or until browned and crumbly.
  3. Stir in lime juice and soy sauce; cook 1 minute. Stir in cilantro.
  4. Spoon beef mixture into lettuce leaves; sprinkle with nuts.
