Pineapple Mule

Ingredients

  • ¼ lime, cut into wedges
  • 1 large fresh mint leaf, torn
  • 6 Tbsp pineapple juice, chilled
  • ¼ cup vodka
  • 1 tsp agave nectar (or use maple syrup)
  • ½ cup ginger beer, chilled
  • Garnish: pineapple wedges (optional)

Instructions

  1. Add lime wedges and mint to a mixing glass, and gently muddle. Add pineapple juice, vodka, and agave; stir.
  2. Pour mixture into a copper mug or Collins glass filled half full with crushed ice. Top with ginger beer. Garnish, if desired. Makes 1 serving.
