Pineapple Mule
Ingredients
- ¼ lime, cut into wedges
- 1 large fresh mint leaf, torn
- 6 Tbsp pineapple juice, chilled
- ¼ cup vodka
- 1 tsp agave nectar (or use maple syrup)
- ½ cup ginger beer, chilled
- Garnish: pineapple wedges (optional)
Instructions
- Add lime wedges and mint to a mixing glass, and gently muddle. Add pineapple juice, vodka, and agave; stir.
- Pour mixture into a copper mug or Collins glass filled half full with crushed ice. Top with ginger beer. Garnish, if desired. Makes 1 serving.
