Cheesy Beef and Vegetable Calzones

Ingredients
- 1 lb ground beef
- 2 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
- 1 onion, diced
- 1 Tbsp olive oil
- 1 tsp dried thyme (or use dried crushed rosemary)
- ½ tsp pepper
- 2 (13.8-oz) cans refrigerated pizza crust
- 1½ cups shredded Cheddar cheese
- 1 large egg
Instructions
- Preheat oven to 425°F. Cook beef in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Drain beef, and remove from skillet.
- Cook vegetables and onion in hot oil in same skillet over medium-high heat 6 to 8 minutes or until tender. Stir in beef, thyme, and pepper.
- Cut each portion of dough into 6 equal pieces. You'll have 12 pieces total. Divide beef mixture and cheese among dough portions, placing on one half of dough. Fold dough over filling, and press edges to seal.
- Place calzones on a lightly greased large baking sheet. Beat egg, and brush over calzones. Bake 10 to 15 minutes or until browned.
