Cheesy Beef and Vegetable Calzones

Ingredients

  • 1 lb ground beef
  • 2 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
  • 1 onion, diced
  • 1 Tbsp olive oil
  • 1 tsp dried thyme (or use dried crushed rosemary)
  • ½ tsp pepper
  • 2 (13.8-oz) cans refrigerated pizza crust
  • 1½ cups shredded Cheddar cheese
  • 1 large egg

Instructions

  1. Preheat oven to 425°F. Cook beef in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Drain beef, and remove from skillet.
  2. Cook vegetables and onion in hot oil in same skillet over medium-high heat 6 to 8 minutes or until tender. Stir in beef, thyme, and pepper.
  3. Cut each portion of dough into 6 equal pieces. You'll have 12 pieces total. Divide beef mixture and cheese among dough portions, placing on one half of dough. Fold dough over filling, and press edges to seal.
  4. Place calzones on a lightly greased large baking sheet. Beat egg, and brush over calzones. Bake 10 to 15 minutes or until browned.
