Spinach-Mushroom Spaghetti

Ingredients

  • ½ (16-oz) pkg whole-grain spaghetti
  • 1 (16-oz) pkg sliced mushrooms
  • ¾ tsp Italian seasoning
  • 1½ Tbsp olive oil
  • ½ (24-oz) jar fire-roasted marinara sauce
  • ½ pint grape tomatoes, halved
  • ½ (6-oz) pkg baby spinach
  • ⅓ cup crumbled feta cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook mushrooms and seasoning in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until browned and tender, stirring often.
  3. Stir in sauce, tomatoes, spinach, and cheese. Cook 2 to 3 minutes or until thoroughly heated. Toss with pasta.

  • 1 (12-oz) pkg green beans
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F.  Toss together beans, garlic, and oil; spread in a single layer on a rimmed baking sheet.
  2. Bake 10 to 12 minutes or until tender. Toss beans with salt and pepper.
