Ingredients

  • ¼ cup barbecue sauce
  • ¼ cup refrigerated yogurt Ranch dressing
  • 1 (9-oz) pkg chopped romaine salad mix
  • 1½ cups frozen corn kernels, thawed and drained
  • 1 cup cornbread croutons (or use seasoned croutons)
  • ½ (16-oz) pkg sweet mini-peppers, cut into 1-inch pieces
  • ½ lb sliced hickory smoked turkey breast, chopped
  • 1 avocado, chopped
  • ½ cup shredded reduced-fat Cheddar cheese
  • ¼ cup chopped red onion

Instructions

  1. Whisk together barbecue sauce and dressing. Divide lettuce, corn, croutons, peppers, turkey, avocado, cheese, and onion among 4 shallow bowls. Drizzle with dressing.
