Ingredients

  • 2 (3.5-oz) pouches boil-in-bag brown rice 
  • 1½ lb ground sirloin
  • 1 (1-oz) envelope low-sodium taco seasoning 
  • 2 red or green bell peppers, chopped
  • 1 onion, diced 
  • 1 (10-oz) can diced tomatoes with green chiles 
  • 1½ cups shredded Monterey Jack cheese 
  • 2 avocados, diced

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, sprinkle beef with taco seasoning; cook in a large skillet coated with cooking spray over medium-high heat 8 minutes or until browned and crumbly.
  3. Add bell peppers, onion, and tomatoes; cook 5 minutes or until vegetables are tender. Stir in rice.
  4. Sprinkle with cheese; cover and cook 1 minute or until cheese melts. Top with avocado.
