Ingredients

  • 4 cups frozen vegetable stir-fry medley
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2½ Tbsp all-purpose flour
  • 3 cups milk
  • 3 cups low-sodium vegetable broth
  • 2¼ cups orzo
  • 1½ cups shredded mozzarella cheese
  • ¾ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook vegetables and garlic in hot oil in a Dutch oven over medium-high heat 8 to 10 minutes or until lightly browned. Add flour, stirring until blended.
  2. Add milk, broth, and orzo; bring to a simmer. Reduce heat to medium, and cook 7 minutes, stirring occasionally, until orzo is almost tender.
  3. Stir in cheese, salt, and pepper; cook 2 to 3 minutes or until thickened.
