Sheet Pan Turkey Mac and Cheese
Apple-Orange-Spinach SaladIngredients
- ½ (16-oz) pkg cavatappi pasta (or use penne)
- 2 Tbsp butter
- ¾ lb fully-cooked turkey breast, chopped
- 2 Tbsp all-purpose flour
- ½ tsp garlic powder
- 1 cup whole milk
- ½ cup heavy cream
- 1 tsp Dijon mustard
- 1 (8-oz) block sharp Cheddar cheese, shredded and divided
- ¼ cup shredded Parmesan cheese
- ½ cup panko breadcrumbs
Instructions
- Cook pasta according to package directions; drain well.
- Meanwhile, melt butter in a Dutch oven over medium heat; add chopped turkey, and cook, stirring, 2 minutes. Add flour and garlic powder; cook, stirring constantly, 2 minutes.
- Gradually stir in milk, cream, and mustard. Cook until mixture is thickened and bubbly. Gradually stir in 1½ cups shredded Cheddar and Parmesan cheese until melted.
- Add pasta; stirring to coat. Season with salt and pepper to taste.
- Preheat broiler. Spoon pasta mixture into a lightly greased rimmed baking sheet. Stir together ½ cup shredded Cheddar and breadcrumbs; sprinkle over mac and cheese.
- Broil 4 to 5 minutes or until cheese is melted and breadcrumbs are golden.

- 1 (5-oz) pkg spinach
- 1 (11-oz) can mandarin oranges, drained
- 1 Honeycrisp apple, chopped
- ¼ cup balsamic vinaigrette

- Toss together all ingredients in a bowl just before serving.
