Crispy Lemon-Dill Fish

Roasted Garlic Red Potatoes and Steamed Green Beans

Ingredients

  • 1½ cups panko breadcrumbs
  • 2 Tbsp olive oil
  • 1 Tbsp minced fresh dill
  • 2 tsp lemon zest
  • 6 (6-oz) tilapia fillets
  • ½ cup mayonnaise

Instructions

  1. Preheat oven to 425°F. Stir together breadcrumbs, oil, dill, and lemon zest in a bowl.
  2. Place fish on a lightly greased rimmed baking sheet; season with salt and pepper, if desired. Brush tops of fillets with mayonnaise. Sprinkle with breadcrumb mixture, pressing gently to adhere.
  3. Bake 10 to 15 minutes or until fish flakes with a fork.

  • 1 (22-oz) pkg frozen roasted garlic red potatoes
  • 2 (8-oz) pkg thin green beans
  • 2 Tbsp butter, softened

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Steam green beans according to package directions; toss with butter until melted and season with salt and pepper, if desired.
