Cheesy Barbecue Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ⅓ cup barbecue sauce
  • ½ cup shredded colby-Jack cheese
  • ½ (4.5-oz) pkg crumbled bacon

Instructions

  1. Preheat oven to 400°F. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Season chicken lightly with salt and pepper. Cook chicken in hot oil in an oven-safe skillet over medium-high heat 3 minutes per side or until browned.
  3. Brush chicken with barbecue sauce. Transfer skillet to oven, and bake 10 minutes.
  4. Sprinkle chicken with cheese and bacon; bake 3 minutes longer or until cheese is melted.

Side Dish Ingredients

  • 1 (8-oz) pkg thin green beans
  • 1 Tbsp butter
  • 1 (24-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Steam beans according to package directions; toss with butter until melted. Season with salt and pepper to taste.
  2. Heat potatoes according to package directions.
