Cheesy Barbecue Chicken
Buttered Green Beans and Mashed PotatoesIngredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- ⅓ cup barbecue sauce
- ½ cup shredded colby-Jack cheese
- ½ (4.5-oz) pkg crumbled bacon
Instructions
- Preheat oven to 400°F. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Season chicken lightly with salt and pepper. Cook chicken in hot oil in an oven-safe skillet over medium-high heat 3 minutes per side or until browned.
- Brush chicken with barbecue sauce. Transfer skillet to oven, and bake 10 minutes.
- Sprinkle chicken with cheese and bacon; bake 3 minutes longer or until cheese is melted.
Side Dish Ingredients
- 1 (8-oz) pkg thin green beans
- 1 Tbsp butter
- 1 (24-oz) pkg refrigerated mashed potatoes
Side Dish Instructions
- Steam beans according to package directions; toss with butter until melted. Season with salt and pepper to taste.
- Heat potatoes according to package directions.
