Beet, Goat Cheese, and Spinach Wraps

Ingredients

  • 2 (8.8-oz) pkg cooked red beets
  • 1 (5-oz) pkg baby spinach
  • ¾ cup crumbled goat cheese
  • 1 English cucumber, thinly sliced
  • ½ cup thinly sliced red onion
  • ½ (6-oz) pkg roasted sea salt chickpeas
  • ⅓ cup balsamic vinaigrette
  • 6 flax, oat bran, and whole wheat flatbreads

Instructions

  1. Coarsely chop beets. Combine beets, spinach, cheese, cucumber, onion, and chickpeas in a bowl; toss with vinaigrette.
  2. Divide salad among flatbread; roll up to serve.

  • 1 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 1 (16-oz) pkg strawberries, quartered

Side Dish Instructions

  1.  Whisk together vinegar and honey in a large bowl. Add berries; toss.
