Beet, Goat Cheese, and Spinach Wraps
Honey-Balsamic Strawberries
Ingredients
- 2 (8.8-oz) pkg cooked red beets
- 1 (5-oz) pkg baby spinach
- ¾ cup crumbled goat cheese
- 1 English cucumber, thinly sliced
- ½ cup thinly sliced red onion
- ½ (6-oz) pkg roasted sea salt chickpeas
- ⅓ cup balsamic vinaigrette
- 6 flax, oat bran, and whole wheat flatbreads
Instructions
- Coarsely chop beets. Combine beets, spinach, cheese, cucumber, onion, and chickpeas in a bowl; toss with vinaigrette.
- Divide salad among flatbread; roll up to serve.

- 1 Tbsp balsamic vinegar
- 1 Tbsp honey
- 1 (16-oz) pkg strawberries, quartered
Side Dish Instructions
- Whisk together vinegar and honey in a large bowl. Add berries; toss.
