Roasted Vegetable and Burrata Sandwiches

Ingredients

  • 2 zucchini, sliced
  • 2 pints cherry tomatoes
  • 1 small red onion, sliced
  • 2 (6-oz) pkg sliced portobello mushrooms
  • 5 Tbsp olive oil, divided
  • 2 tsp Italian seasoning
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 (1-lb) loaf ciabatta bread, halved lengthwise
  • 1 (8-oz) pkg burrata cheese (or use fresh mozzarella), torn
  • 1 (0.5-oz) pkg fresh basil, leaves separated
  • 3 Tbsp balsamic glaze (or use balsamic vinegar)

Instructions

  1. Preheat oven to 425°F. Toss together zucchini, tomatoes, onion, mushrooms, 4 Tbsp oil, Italian seasoning, salt, and pepper in a large bowl.
  2. Spread vegetables in a single layer on a foil-lined large rimmed baking sheet. Bake 25 to 30 minutes, stirring once after 15 minutes.
  3. Place bread, cut sides up, on a baking sheet; brush with 1 Tbsp oil. Bake 5 to 6 minutes or until toasted.
  4. Layer roasted vegetables, cheese, and basil on bread bottom; drizzle with glaze, and cover with bread top. Cut sandwich into 6 servings.

Side Dish Ingredients

  • 1 (5-oz) pkg spring mix
  • 1 cup seedless red grapes, halved
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic glaze (or use balsamic vinegar)
  • 6 Tbsp sliced almonds

Side Dish Instructions

  1. Toss together all ingredients in a large bowl; season with salt and pepper, if deisred.
