Ingredients

  • 1½ lb skirt steak (or use flank steak)
  • ¼ cup olive oil, divided
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (10-oz) pkg frozen riced cauliflower
  • 1 (12-oz) pkg frozen whole kernel corn
  • 1 (10-oz) pkg chopped romaine lettuce
  • 2 Tbsp lime juice
  • 1 cup fresh salsa
  • 2 avocados, sliced
  • ¾ cup crumbled feta cheese

Instructions

  1. Preheat broiler. Rub steak with 2 Tbsp oil; sprinkle with salt and pepper.
  2. Broil steak 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, cook cauliflower rice and corn according to package directions.
  4. Divide lettuce, cauliflower, and corn among 6 bowls. Whisk together 2 Tbsp oil and lime juice. Drizzle over each serving.
  5. Top with steak, salsa, avocados, and cheese.
