Steak Burrito Bowls

Ingredients
- 1½ lb skirt steak (or use flank steak)
- ¼ cup olive oil, divided
- ½ tsp salt
- ½ tsp pepper
- 2 (10-oz) pkg frozen riced cauliflower
- 1 (12-oz) pkg frozen whole kernel corn
- 1 (10-oz) pkg chopped romaine lettuce
- 2 Tbsp lime juice
- 1 cup fresh salsa
- 2 avocados, sliced
- ¾ cup crumbled feta cheese
Instructions
- Preheat broiler. Rub steak with 2 Tbsp oil; sprinkle with salt and pepper.
- Broil steak 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, cook cauliflower rice and corn according to package directions.
- Divide lettuce, cauliflower, and corn among 6 bowls. Whisk together 2 Tbsp oil and lime juice. Drizzle over each serving.
- Top with steak, salsa, avocados, and cheese.
