Baked Chicken Taquitos
Ingredients
- ¼ cup diced onion
- 2 tsp olive oil
- 1 cup shredded rotisserie chicken
- ½ cup salsa, divided
- ½ tsp chili powder
- ½ tsp ground cumin
- 4 soft taco-size flour tortillas
- ⅔ cup shredded Mexican-blend cheese
- ⅓ cup sour cream
- 1 green onion, thinly sliced
Instructions
- Preheat oven to 400°F. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
- Reduce heat to medium; stir in chicken, ¼ cup salsa, chili powder, and cumin; cook 6 to 8 minutes or until thickened.
- Spread chicken mixture down middle of each tortilla; sprinkle with cheese. Roll up tortillas, and place, seam sides down, on a foil-lined baking sheet. Spray tortillas with cooking spray.
- Bake 10 minutes or until golden brown. Stir together sour cream and green onion. Serve taquitos with sour cream mixture and ¼ cup salsa.
