Baked Chicken Taquitos

Ingredients

  • ¼ cup diced onion
  • 2 tsp olive oil
  • 1 cup shredded rotisserie chicken
  • ½ cup salsa, divided
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • 4 soft taco-size flour tortillas
  • ⅔ cup shredded Mexican-blend cheese
  • ⅓ cup sour cream
  • 1 green onion, thinly sliced

Instructions

  1. Preheat oven to 400°F. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
  2. Reduce heat to medium; stir in chicken, ¼ cup salsa, chili powder, and cumin; cook 6 to 8 minutes or until thickened.
  3. Spread chicken mixture down middle of each tortilla; sprinkle with cheese. Roll up tortillas, and place, seam sides down, on a foil-lined baking sheet. Spray tortillas with cooking spray.
  4. Bake 10 minutes or until golden brown. Stir together sour cream and green onion. Serve taquitos with sour cream mixture and ¼ cup salsa.
