Easy Chicken Picante

Cilantro-Lime Rice and Black Beans

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1 cup picante sauce
  • 1 cup shredded pepper-Jack cheese

Instructions

  1. Cut chicken in half lengthwise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until browned.
  3. Pour picante sauce over chicken; sprinkle with cheese. Cover and cook 3 minutes or until cheese melts.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • 2 Tbsp chopped fresh cilantro
  • 1½ tsp lime zest
  • ¼ tsp salt
  • ¼ tsp pepper 
  • 1 (15-oz) can black beans, drained and rinsed

Side Dish Instructions

  1. Cook rice according to package directions; stir in cilantro and lime zest. Sprinkle with salt and pepper.
  2. Heat beans according to package directions.
