Ham and Cheese Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 (8-oz) pkg sliced ham
  • 6 slices provolone cheese
  • 1 (10.5-oz) can cream of chicken soup
  • ¼ cup white wine (or use chicken broth)
  • ½ tsp paprika

Instructions

  1. Cut chicken in half lengthwise, and pound to ½-inch-thickness in a zip-top plastic bag with the heel of your hand or a meat mallet; sprinkle with pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 minutes per side or until done. Top each piece of chicken with ham and cheese; cover and let stand until cheese melts.
  3. Meanwhile, stir together soup, wine, and paprika in a small saucepan; cook over medium-low heat until thoroughly heated. Spoon sauce over chicken.

  • 3 Tbsp grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 2 (12-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Cook rice according to package directions; toss with cheese, Italian seasoning, and ¼ tsp each salt and pepper.
  2. Steam broccoli according to package directions; sprinkle with ¼ tsp each salt and pepper.
